Health Benefits of Dark Chocolate

My parents went to the Steel Grass Chocolate Farm on Kauai during their Christmas vacation. When they got back my Dad shared a handout with me that he got there about dark chocolate. (Lucky them...it also involved taste testing tons of types of chocolate...yummmm!)

Health Benefits of Dark Chocolate

1.       Cacao has one of the highest concentrations of antioxidants of any food.
Antioxidant levels are measured by Oxygen Radical Absorbance Capacity (ORAC.)
Here's a list of ORAC levels (per roo grams) found in common foods and chocolate:

·         alfalfa sprouts - 930
·         plums- 949
·         Brussels sprouts - 980
·         Raspberries - 1,22o

2.       Dark chocolate contains significant amounts of minerals essential to
healthy metabolism such as Magnesium, Phosphorus, and Calcium.

3.       The fat in better quality dark chocolate is cocoa butter, one of the components
of the cacao bean. Cocoa butter has a beneficial effect on cholesterol levels
because it consists mainly of stearic acid and oleic acid. Stearic acid is a saturated
fat but unlike most saturated fatty acids, it does not raise blood cholesterol. Oleic
acid, a monounsaturated fat, does not raise cholesterol and may even reduce it.

4.       Chemicals in dark chocolate called theobromines act as mood-elevators,
and can produce a pleasurable sensation of alertness and well-being by boosting
serotonin and endorphin levels in the brain. Dark chocolate does contain caffeine,
but not much: you'd have to eat five average-size bars to ingest as much caffeine as

you get from a single cup of black coffee.

New Food Adventures: Coconut Oil

If you haven't tried one of the world's healthiest cooking oils--coconut oil--now is the time to try it. We love it and it lasts forever. It is solid at room temperature and lasts forever. We keep three large bottles of it on hand in our food storage. We buy the large Nutiva Organic, unrefined, cold-pressed extra-virgin oil at Costco for $22--that's a steal!

How we use coconut oil:

  • In homemade hygiene products: deodorant, lotion (and sunscreen), toothpaste (or oil pulling)
  • for popcorn (in place of butter)
  • sautee vegetables (greenbeans with almonds are main/favorite option)
  • degreaser (for pans of baked goods or for skillet when cooking eggs)
  • melted and put into brownies in place of other oils
  • use half butter and half coconut oil in homemade granola

Replacing Refined Sugars with Natural Sugars One Step At a Time


I decided last year to stop buying white sugar. Why? Well, I'm not the greatest cook yet, so I'm trying new recipes regularly; but I found that it was too easy for me to use white sugar in things instead of finding substitutes...because I had it on hand. So when I ran out of it one day last year, I decided that was my last day to have it in my house...at least for an experiment. 
It has now been about nine months that we have been white-sugar-free in our house. 

Do you want to take the challenge? You don't have to go cold turkey, but here is some info to help you make the switch from white sugar to better alternatives.

The average American now consumes 175 pounds of sugar per year! That's 46 teaspoons a day! If we pretend that sugar actually had some benefits, eating one-half pound every day would not seem like such a bad idea. But the truth is that sugar has absolutely no nutritional value whatsoever. Not only does it totally lack nutrients, but when you eat sugar it actually robs your body of nutrients-- vitamins, minerals and even enzymes.

Sure sugar may be temporarily pleasing to the taste buds, but the rest of the body suffers for it. The sad thing is that most people are not aware of the devastating effects that excess sugar consumption has on the body. The cartoon illustrates a typical day for many Americans and how the standard American diet affects our health, especially the way we think and feel.

Panel 1. Who has time for breakfast?

Eating a typical high carb breakfast or skipping it all together can have a major impact on the rest of your day. Here's why: Blood sugar (glucose) is the fuel for every single cell in your body. So naturally you want your fuel supply to be constant all day long. Eating balanced meals at regular intervals throughout the day is necessary to maintain this balance. Breakfast is important because it lays the foundation for the rest of the day. Typical breakfast foods--cold cereal, bagels, donuts, pancakes, waffles, or even oatmeal with sugar, fruit, toast with jam, and fruit juice--are all high in sugars and simple carbohydrates which cause the blood sugar to spike up and then crash.

Panel 2. The morning crash

The "crash" actually has a medical word for it--hypoglycemia. It is a state of low blood sugar, not actually a disease. When your blood sugar drops too low (after eating a high sugar, high carb meal) or stays too low (after eating nothing at all) many symptoms can occur. The first symptoms to set in are usually mental difficulties, because the brain requires a lot of fuel to do its job. So you may have trouble concentrating or processing information, being forgetful, or feeling mentally dull. Other symptoms include anxiety, feeling overwhelmed, irritable (especially when hungry), depression, crying spells, addictive behavior and cravings for sweets or starches. And, of course, if your fuel supply drops too low, fatigue will obviously be a factor. Many people rely on caffeine to pick themselves up when they crash, creating a "tired-wired" feeling. Many are not aware that the caffeine creates further problems by weakening the adrenal glands which produce hormones that help your body deal with stress.

Panel 3. Lunch on the go

It's common for many people to rush through lunch, grabbing something quick and convenient, basically whatever it takes to make the hungry feeling go away. Convenience foods are high in refined carbohydrates, which not only perpetuate the up-and-down cycle of the blood sugar roller coaster, but also weaken the immune system. Studies have shown that the ingestion of 100-gram portions of carbohydrates, such as glucose, fructose, sucrose, honey, and orange juice, all significantly reduced the ability of neutrophils to engulf and destroy bacteria. These effects started less that 30 minutes after ingestion and lasted for over five hours.1 Eating sugar throughout the day is a constant assault on the immune system.
Even if you don't think you eat a lot of sugar, you'd be surprised at how quickly 100 grams can add up. Just 10 gum drops, three pancakes with syrup, four pretzel rods and a pop, or even a "healthy" meal like oatmeal with raisins, a banana, and a glass of orange juice, are all well over 100 grams each!

Panel 4. The afternoon crash

Ever feel that slump in the middle of the afternoon? You know, when you're so exhausted the only thing you can think about is taking a nap. This is the time when most people go in search of some caffeine and sugar to pick themselves up quickly--especially at work because falling asleep at your desk doesn't go over really well with your boss! The problem with the quick "pick-me-up" is that in no time your blood sugar crashes down again. "What goes up quickly, comes down quickly" applies to your blood sugar as well as other things in life!
These "pick-me-up" convenient snack foods are high in refined carbohydrates, such as white flour and white sugar, which rob the body of enzymes, minerals and vitamins, especially B vitamins. B vitamins are essential for proper brain and nervous system function. A deficiency in B vitamins includes symptoms like depression, anxiety, panic attacks, heart palpitations, and muscle weakness and tenderness, to name a few.

Panel 5. Who feels like cooking dinner?

I'm sure at one time or another, possibly every day of your life, you have felt like the woman in our cartoon; let's call her Suzie. Suzie has deprived her body of the proper nutrients and fuel it needs to do its job. It's no wonder that she, just like millions of other Americans, feels so exhausted by the end of the day. So when she comes home from work, taking the time to prepare a nourishing meal for herself and her family is probably the last thing on her mind. The problem is that now Suzie's poor eating habits--and all the problems caused by poor eating habits--are being passed on to her children. So after loading up on a convenient high-carb meal, Suzie, as well as the rest of the family, is likely to experience symptoms of low blood sugar, creating an evening full of mood swings, tension and chaos.

Panel 6. Why can't I sleep?

At the end of a long day of exhausting your body with a poor diet, sleep couldn't come soon enough. But for those who have sugar-handling problems, falling asleep and staying asleep can be quite a challenge. The purpose of sleep is to heal and repair, and the body requires fuel for this work. So if your body doesn't have enough fuel to do its job, chances are you'll find yourself just lying there in bed, unable to fall into a deep sleep no matter how exhausted you may feel. If staying asleep is the problem, you've simply run out of fuel, so you find yourself staring at the clock at 2:57 A.M. unable to go back to sleep. Not only does a lack of sleep further weaken your immune system, but it also causes an even deeper level of fatigue, weakness, anxiety and nervousness.
This is an example of what can occur during a typical day in the life of an American who eats the standard American diet. And this is just one day. Over time, this pattern can seriously affect the way that we think and feel, and ultimately our overall health. It's much easier to enjoy life when you're healthy! Before we can build good health, we have to stop doing the things that destroy it--eliminating white sugar is a great start!
The following program will help you replace refined sugar with natural sugars, one step at a time.

Step 1. Eliminate all sugar drinks

Avoid all sodas, powdered drinks, sports drinks and fruit juices (basically anything in a can, bottle or drink box). Instead, drink plenty of clean water (reverse osmosis filtration is best). It can be flavored with juice of lemon, orange, or essential oils like cinnamon, tangerine or peppermint. Also, herb teas make tasty drinks and come in many delicious flavors (but avoid those with added "flavorings"). Try serving tea chilled and add a pinch of stevia (a natural low-calorie sweetener available at health food stores). If you have access to some sour lacto-fermented drinks or are willing to make them, these would be great.

Step 2. Limit sugar foods to three times per week

Even if you don't think you eat a lot of sweets, you might be surprised at how quickly they can add up without your even knowing, especially if you have a habit of "unconscious grazing." Use this step to help you pay close attention to the foods you put in your body. Food journaling can be quite helpful for some people. Most important, pay attention to how you feel after eating sweets. Once you have given up the habit of eating sweets on a daily basis, it is common to experience symptoms like nausea, headache, fatigue, or dizziness after indulging in sweets. After giving up sweets for a while, many people say that they don't even taste that good anymore.

Step 3. Make a habit of eating at least three good meals per day

One of the best ways to overcome cravings for sweets is to eat balanced meals at regular intervals throughout the day. To build a balanced meal, begin with a protein (complete protein is anything from an animal), include a natural source of carbohydrates (veggies, legumes, properly prepared whole grains, or fruits), and don't forget the good fats (butter, lard, tallow, coconut, oil, palm oil, and olive oil). Don't be afraid to eat lots of good fat at every meal. Fats slow down the entry of sugar into the blood stream and prevent those morning and afternoon crashes. If your breakfast, lunch and dinner are filled with nutritious, high-fat foods, you probably won't even think about snack foods between meals.

Step 4. Replace refined sugars with natural sugars

Get in the habit of reading labels and avoid products made with white sugar, corn syrup, high fructose corn syrup, sucrose, dextrose, fructose, and ALL artificial sweeteners. Instead use natural sweeteners, including pure maple syrup, molasses, stevia, Rapadura (dehydrated cane sugar juice) or raw unfiltered honey. Many health food stores offer products made with natural sweeteners, like cookies and ice cream, and even licorice, although it is better to make your own. Use this step to help you become acquainted with all the natural alternatives to replace refined sugar products.

Step 5. Limit natural sweets to three times per week

Blood sugar imbalances occur after eating too many sweets, even the natural ones! So it's important to limit even the natural sweets in your diet. And remember, the best way to prevent sweets from causing a major crash in blood sugar is to avoid eating them by themselves. Instead include dessert as part of a balanced meal. A steak with some steamed veggies, a salad topped with olive oil-based dressing, and a couple of natural cookies made with butter and eggs would be a healthy and balanced way to include dessert. Avoid having dessert with a meal that is high in carbohydrates like pasta, bread, or rice.
Eliminating refined sugar can be quite a challenging step, but the incredible impact it will have on your overall health and well-being is definitely worth it! Set a target date for accomplishing each step and be sure to complete one step before moving on to the next one. Be patient with yourself through this process. Many times people try to quit sugar "cold turkey," but end up dreaming about it all day long until eventually they binge on sweets. Then they are right back on the blood-sugar roller coaster. The goal is to stabilize your blood sugar by eating balanced meals at regular intervals throughout the day so that you no longer crave sweets. True success comes when you do eat sweets and they no longer taste good, better yet, they give you a headache, make you nauseous, tired, dizzy and depressed!

How to Stabilize Your Blood Sugar

Blood sugar (glucose) is the fuel for every single cell in your body. Eating balanced meals at regular intervals throughout the day is the most important thing we can do to keep our fuel supply stable. In order to know how to balance a meal, it is necessary to understand how different foods burn. I like to use a simple campfire analogy to explain this to clients. Food burns a lot like a nice campfire.

Fats are like the big log in the fire that burns for a long time. Fats are slow-burning fuels that help to stabilize blood sugar and allow you to go between meals without feeling so hungry. Fats also send a signal to your brain to tell you when you're satisfied, so you know when to stop eating. This explains why people on lowfat diets are so hungry all the time. Eating fats at every meal helps to control your appetite. The best fats for consumption are butter, lard, tallow, coconut oil, palm oil or olive oil. Good fats should be included with every meal.

Protein is like the teepee which provides the support and structure for the campfire. Protein is the building block for every single cell in the body. It's what the body uses to heal and repair. Protein also supplies the body with amino acids which help to stabilize blood sugar and reduce cravings for carbohydrates. Complete protein comes from animal sources and should be the base of every meal.
Carbohydrates are quick burning fuels which are like the kindling in the campfire. Carbohydrates that are high in fiber burn a little slower, like little twigs. The processed carbohydrates like white bread, sugared cereals, candy, cakes, cookies, crackers, pasta, and bagels burn up more quickly, like leaves and paper. And what would happen if you threw a bunch of twigs, leaves, and paper in a pile and lit them on fire? You'd get a huge blaze and then it would burn out quickly. The same thing happens when you eat a meal of nothing but carbohydrates, even the natural ones like fruits, vegetables and whole grains.

So to keep your blood sugar stable, think of building a nice campfire at each meal. Start with your protein teepee, add some natural carbohydrate kindling, and be sure to include your big fat log to keep your fire burning strong!

Oil Infusions 101

Making infused oils is a process of transferring flavor and scent into a carrier oil. It can be used to add flavor to cooking oils. As well as making scent oils for use in aromatherapy, massage oils and making beauty products like soaps and lotions.

It is a simple process of infusing flowers, herbs or spices into an oil by heating so that the volatile oils can transfer into the carrier oil. (this is the same for herbal tea insusions, vinegar infusions, etc.)

The best type of oil to use is extra virgin olive oil, you can also use grape seed, peanut or sunflower oil. Walnut oil is also good if it will be used cold such as for salad dressings since it is not good for heating.

  
How to make an infused oil
There are two main ways to infuse the oil: heating the oil on a stove or leaving an oil in a hot place for the sun to warm.

Cold Method
  1. Wash your herbs and dry completely
  2. Bruise or rub herbs, for spices toast them to bring out the flavor
  3. Place in a clean dry glass jar
  4. Add oil until it completely covers the herbs/spices
  5. Place a lid on the jar and close
  6. Place the jar on a sunny windowsill or other sunny spot. Swirl or shake the jar every day or so
  7. After a week drain off the oil into a clean dry jar using a sieve or cheesecloth or coffee filter
  8. Taste the oil to see if the flavour is strong enough
  9. If you want it stronger add more herbs/spices to the oil, close the lid and place back in the sunny spot for another week
  10. Repeat as needed 
  11. If you are happy with the flavor, pour the oil into a nice glass bottle, you can also add a fresh sprig of herb to make if look fancy
  12. Store in a cool dry place like the refrigerator
 **It is important that no moisture is introduced into the oil as it can become rancid or prone to mold or bacteria growth. (Garlic is particularly prone to this so it should be stored in the fridge or made with the heating method mentioned below)


Hot Method
Heating the herbs/spices in oil is a quicker way of making infused oil and is great for dried herbs and spices since the heat helps brings out the flavour. If using dried herbs, instead of fresh, skip steps 1-3 and start at step 4.
  1. Wash your fresh herbs and dry completely (there should be no water)
  2. Bruise or rub herbs; for spices toast them to bring out the flavor
  3. Place in a clean dry glass jar
  4. Heat the oil (and dried spices, if you're not using fresh) until the oil slightly bubbles and spices sizzle, it needs constant stirring but should only take about 5 minutes; don't overcook or let boil
  5. When ready, (strain out dried herbs if used) pour oil into a clean glass jar and let cool
  6. Taste the oil to see if the flavor is strong enough  
  7. Close the top and store in a cool dry place for two weeks and then store in the refrigerator (or start using right away if you used dried herbs)
  8. Don't let the fresh herbs stick out above the oil, or else mold forms. Take them out of the oil once infused so this doesn't happen
If you have the plants in your garden, then you can save money and be quite resourceful. If there are plants or smells you like, you may want to invest in those particular plants (assuming they grow well in your location).

RECIPE IDEAS
Make Italian infused oil for sauteeing meat, roasting potatoes, making croutons, or putting on your pasta with parmesan (1-2 sprigs of  basil, thyme, oregano, etc.--according to taste).

Fats & Oils 101...

Fats from animal and vegetable sources provide a concentrated source of energy in the diet and provide the building blocks for cell membranes.  Fats as part of a meal slow down nutrient absorption so that we can go longer without feeling hungry.  In addition, they act as carriers for important fat-soluble vitamins A, D, E, and K.  Dietary fats are needed for the conversion of carotene to vitamin A, for mineral absorption, and a host of other processes.

Fats & Oils...WHICH ONE SHOULD I USE?

FATS
Duck & Goose Fat-  35% saturated fat, 52% monounsaturated fat and about 13% polyunsaturated fat.  These fats are quite stable and are highly prized for frying potatoes.

Chicken Fat- about 31% saturated, 49% monounsaturated, and 20% polyunsaturated.  Inferior to goose and duck fat but still used for frying in kosher kitchens.

Lard (pork fat)- 40% saturated, 48% monounsaturated, and 12% polyunsaturated.  Like duck/goose fat, lard is stable and a preferred fat for frying.  It is an excellent source of vitamin D.  Some researchers believe that pork products should be avoided because they may contribute to cancer.  Others suggest that only pork MEAT presents a problem and that pig FAT in the form of lard is safe and healthy.  (This is my belief as well, so when we do fry our chicken, we use lard!)


OILS


Olive Oil-  75% oleic acid (stable monounsaturated fat), 13% saturated fat, and 10% omega-6 as well as 2% omega-3 linolenic acid.  The high percentage of oleic acid makes olive oil ideal for salads and for cooking at moderate temperatures.  Extra virgin  olive oil is also rich in antioxidants.  It should be cloudy, indicating that it has not been filtered, and have a golden yellow color, indicating that it is made from fully ripened olives.  Olive oil has withstood the test of time; it is the safest vegetable oil you can use, but don't overdo.  The longer-chain fatty acids found in olive oil are more likely to contribute to the buildup of body fat than the short-chain and medium-chain fatty acids found in butter and coconut oil. 

Peanut Oil- 48% oleic acid, 18% saturated fat, and 34% omega-6.  Like olive oil, peanut oil is relatively stable and therefore appropriate for stirfrys on occasion.  But the high percentage of omega-6 presents a potential danger, so use of this oil should be limited.

Sesame Oil- 42% oleic acid, 15% saturated fat, and 43% omega-6 linoleic acid.  It is similar to peanut oil so use sparingly but it can used for frying because it contains unique antioxidants that are not destroyed by heat.

Flaxseed Oil- 9% saturated fat, 18% oleic acid, 16% omega-6, and 57% omega-3 linoleic acid.  With this high omega-3 content, it provides a remedy for the omega-6/omega-3 imbalance so prevalent in America today.  It should be kept refrigerated, never heated, and consumed in small amounts in salad dressings and spreads.

Tropical OilsPalm Oil is about 50% saturated, 41% oleic acid and about 9% linoleic acid.  Coconut Oil is 92% saturated with over two-thirds of the saturated fat as medium-chain fatty acids.  The lauric acid found in coconut milk and mothers milk provides antifungal and antimicrobial properties.  Coconut milk protects tropical populations from bacteria and fungusso prevalent in their food supply.  Because of this lauric acid, it is often used in baby formulas.  These oils are stable at room temperature for many months without becoming rancid. 

Safflower, Corn, Sunflower, Soybean and Cottonseed Oils- all contain over 50% omega-6 and (except Soybean oil), only minimal omega-3.  Safflower oil contains amost 80% omega-6.  Research continues to accumulate on the dangers of excess omega-6 oils in the diet, whether rancid or not.  Use of these oils should be strictly limited!  They should NEVER e consumed after they have been heated, as in cooking, frying or baking!  High oleic safflower oils, produced from hybrid plants, have composition similar to olive oil, namely, high amounts of oleic acid and only small amounts of polyunsaturated fatty acids and thus are more stable than traditional varieties.  However it is difficult to find truly cold-pressed versions of these oils.

Canola Oil- 5% saturated fat, 57% oleic acid, 23% omega-6, and 10-15% omega-3. The newest oil on the market, canola oil was developed from the rape seed, a member of the mustard family. Rape seed is considered unsuited for human consumption because it contains a long-chain fatty acid called erucic acid, which under some circumstances is associated with fibrotic heart lesions. Canola oil was bred to contain little if any erucic acid and has drawn attention of nutritionists because of its high oleic acid content. But there are some indications that canola oil presents dangers of its own. It has a high sulphur content and goes rancid easily. Baked goods made with canola oil develop mold very quickly. During the deodorizing process, the omega-3 fatty acids or processed canola oil are transformed into TRANS fatty acids, similar to those in margerine and possibly more dangerous.

In summary...
Our Choice of fats and oils is one of extreme importance! Most people, especially infants and growing children, benefit from MORE fat in the diet rather than less. But the fats we eat must be chosen with care. Avoid all processed foods containing hydrogenated fats and polyunsaturated oils. Instead, use traditional vegetable oils like extra virgin olive oil and small amounts of unrefined flax seed oil. Aquaint yourselves with the merits of coconut oil for baking and with animal fats for occasional frying. Eat egg yolks and other animal fats with the proteins to which they are attached. And finally (MY FAVORITE suggestion), use as much good quality organic butter as you like, with the happy assurance that it is wholesome- indeed, an essential- food for you and your whole family...YEAH!

Chocolate: Understanding the Types

How it all begins...
The seeds of the cacao tree have an intense bitter taste, and must be fermented to develop the flavor.
After fermentation, the beans are dried, then cleaned, and then roasted, and the shell is removed to produce cacao nibs. The nibs are then ground to cocoa mass, pure chocolate in rough form.

In its raw state, chocolate has more than 300 nutritional compounds and is one of the richest sources of antioxidants of any food on the planet!  Our bodies need antioxidants to 'mop up' free radicals that can damage our cells. 

The cacao bean is also rich in magnesium (an energy mineral and vital electrolyte that keeps our heart beating well into old age.)  Unfortunately modern diets lack this vital mineral due to intensive farming draining the soil of essential nutrients.  It is also high in calcium and iron

And yes ladies, chocolate is a hormone balancer, that's why we crave and love it so much! It improves sleep, promotes lovely skin and protects the body from pollutants.  Raw chocolate actually has appetite-suppressant properties and often added to weight loss products to help control hunger! Simply enjoy a couple of Raw CHOC's or add half a teaspoon of raw chocolate powder to a teacup of tepid water 20 minutes before a meal for a delicious, natural way to reduce your appetite.

*Personally, I like to dip my bananas in the Raw Cacao Nibs (I bought the bags on Amazon.com for a fairly decent price).  Try implementing them with your daily vitamins for a month and see if you notice a difference like I have!

My friend is a Xocai distributer and after going to one of her parties, I did a bit of research on raw chocolate vs. this company.  I find that it will be cheaper for you to buy your own RAW chocolate and get the same amount of antioxidants and healthful benefits without hurting your wallet.  But if you care to take a look at the Xocai website, I listed it here.  It was delicious chocolate, but I think I'll stick with whole, raw foods!   http://www.mxicorp.com/

Here are the different types of chocolate, but RAW is always the BEST option!

Chocolate liquor is cocoa mass liquefied then molded with or without other ingredients (so it's unsweetened). The liquor also may be processed into two components: cocoa solids and cocoa butter.

Unsweetened baking chocolate (bitter chocolate) contains primarily cocoa solids and cocoa butter in varying proportions.

**The rest of the chocolate types listed below get more and more processed--which means loss of nutrients and more extra ingredients added. It's best to get chocolate with close to 75% or higher cacao for antioxidant properties and nutrient value. 

Dark chocolate: sugar, cocoa butter, cocoa liquor (sometimes vanilla)
- Raw chocolate (raw cacao) is always dark and a minimum of 75% cacao.
- Bittersweet chocolate has less sugar and more liquor than semisweet chocolate, but the two are interchangeable in baking.
- Semisweet chocolate is a dark chocolate with a low sugar content.

-Milk chocolate: sugar, cocoa butter, cocoa liquor, milk or milk powder, and vanilla

-White chocolate: sugar, cocoa butter, milk or milk powder, and vanilla
Because there are no cocoa solids, many do not consider white chocolate as chocolate.

All that said, there are mass producers of chocolate that use cheap and poor quality ingredients and substitutes to give us stuff that tastes like chocolate (though we won't mention names: esp. that rhyme with Persheys). Such ingredients include vegetable oils and artificial vanilla. Not to mention they undergo different processes that definitely lose more nutritional value....so be careful when choosing your chocolates.

*note:  whitish spots on the dark chocolate is called chocolate bloom and is not an indication of chocolate gone bad. Instead, this is just an indication that sugar and/or fat has separated due to poor storage.

Chocolate Substitute:
Carob comes from the carob tree (Mediterranean). It is the pod that comes dried or roasted and has a slightly sweet taste, in powder or chip form, and is used as an ingredient in cakes and cookies. Carob is sometimes used as a substitute for chocolate (one reason is because, unlike chocolate, carob does not contain caffeine), and was used anciently as a sweetener, before sugar cane. Apparently it has also proven effective in relieving diarrhea in infants.

I just bought some carob chips in the bulk section of a local grocery store (these had added nonfat milk powder though, and I prefer dairy-free). Or try any nutrition store--look for the powder form too.

TIP: • 3 TB cocoa powder and 1 T oil, instead of baking chocolate

If you eat the right foods, you can actually still eat a lot. It's when you try to diet and eat the wrong things that you gain weight and interrupt the natural processes in your body from digesting efficiently. Create a good metabolism for youself by helping your system! :)

Sweeteners: The Good, the Bad and the Ugly

Here is some information on sweeteners. Keep in mind when you're cooking and substituting between sweeteners that not all substitute at the same ratios--we've included some tips for a few of them (ex: maple syrup is super sweet and needs about 3/4 cup to 1 cup white sugar, and it's also a liquid so you'd maybe need to subtract some liquid in the recipe...etc.) Enjoy the info and feel free to comment on what has worked for you.

Now on to the classifications of sweeteners...

THE GOOD: NATURAL SWEETENERS
These can be defined as sweet foods in which the nutrients have not been removed, or may even be more concentrated due to boiling down and evaporation. They are minimally processed or naturally made. I have found that these are the best sweeteners to consume because they do us the least amount of harm and actually benefit our bodies in a natural way.

Raw Honey: the original natural sweetener, this is made by bees from flower nectars. Honey comes in hundreds of types and colors. Flavors of honey depend on the kind of blossoms that the bees visited. You can get honey on the comb, as a liquid, as natural crystals, or as a whipped, spreadable mixture. The best choice of honey is RAW in which the honey comes right from the hive and comb and has not been heated. The problem with heat is that many nutrients are very sensitive to it and die. It's the beneficial enzymes found in raw honey that make it so digestible to humans. Raw honey is filtered, but very minimally and in a manor not to destroy the health promoting enzymes and other nutrients.

You'll also notice raw honey is solid at room temperature (like honey should be) and it also looks almost milky. It is not a golden and perfectly clear liquid. Let that be a sign to you - the mirky look to your honey is assurance that it still contains it bee pollen granules, vitamins, minerals, enzymes and whatever else raw honey contains that we haven't figured out yet!

Also, when cooking with honey things tend to brown faster than those made with granulated sugar. Use 3/4 cup plus 1 tablespoon honey in place of 1 cup sugar, and reduce the other liquid ingredients by 2 tablespoons. Unless the recipe includes sour cream or buttermilk, add a pinch of baking soda to neutralize the acidity.

Rapadura (Organic Whole Cane Sugar-Rapunzel brand): is a dried sugarcane juice that is common in Latin American countries, that comes in the form of a brick, or sold in granulated form. It is simply processed by evaporating the water from the Organic Sugar Cane Juice. It is the perfect unbleached, unrefined sweetener to use in place of refined sugars. And the unique processing of Rapadura gives it a mild, caramel-like flavor which is superb for baking and sweetening food and drinks. Be careful not to overdo it because in large amounts, Rapadura can upset the body chemistry just as much as sugar.

Malted Grain Syrups: Made with malted grains, usually barley, these syrups have been used for thousands of years, especially in the Orient. Sprouted grains are kiln-dried and the rootlets removed. The grains are then ground up, dipped briefly in an acid solution and heated with water to form malt syrup. Malt syrup is about 65% maltose, as disaccharide composed of two glucose molecules. (Sucrolose is a disaccharide, composed of glucose and fructose). Malted syrups contain small amounts of nutrients; but their real value is in the fact that they contain little fructose, which in large amounts is far more harmful than glucose.

Barley Malt has a flavored sweetness somewhere between dark molasses and honey. Barley malt works well in baking and making smoothies. The bonus in this natural sweetener is that it has several vitamins and minerals. There are two distinct advantages to the use of barley malt. First, the product tends to cause lower spikes in blood glucose levels. This helps to make the product a viable option in the preparation of foods for people who are attempting to monitor their blood sugar levels. While the malt does contain a significant amount of carbohydrates, they are considered to be the good kind, similar to those found in oatmeal and other whole grains. Because of the high fiber content, this type of malt is sometimes processed into a product known as barley malt extract. The extract can be consumed to add bulk to the stool, which in turn helps with general colon health and lowering bad cholesterol in the body. Along with the powder form, it is also possible to purchase barley malt extract tablets for this purpose.

Rice Syrup is also called brown rice syrup, it is made from brown rice starch that has been converted into maltose. Milder than most honey, rice syrup can be used in cooking, drinks, and as a spread on breads. Since rice syrup will cause an elevation in blood sugar, it is not suitable for diabetics; diabetics and people with dietary issues should talk to their doctors about alternatives to sugar which will be healthy for them.

Blackstrap Molasses: comes from crushed and squeezed cane, which yields a thin,yellowish juice. The cane juice is boiled down and reduced to unsulphured molasses or the aptly-named blackstrap molasses. Dark molasses, especially blackstrap, has a distinctive buttery flavor and is loaded with zinc, calcium, iron, copper, chromium, and potassium.

When substituting molasses for sugar, use 1-1/3 cups molasses for 1 cup sugar, and reduce the amount of liquid in the recipe by 5 tablespoons. Molasses is also more acidic than sugar; add 1/2 teaspoon baking soda for each cup of molasses used in substitution for sugar. Replace no more than 1/2 the sugar called for in a recipe with molasses.

Date Sugar: made from ground, dehydrated dates. It’s high tryptophan content makes it a good sweetner for hyperactive children as this amino acid has a calming effect as opposed to the white sugar in most products today. You can measure this in the same quantities you would use for refined sugar, when making baked goodies. Crumbly and textured, it won't dissolve in hot drinks, but lends a great taste to pie and cobbler toppings.

Pure Maple Syrup: collected from the rising sap of sugar maple trees, which is boiled down to drive off the water and thicken the syrup. Maple syrup comes in several grades, from dark to light, and like molasses, contains a good amount of calcium. You can use this wonderful sweetener on pancakes and in baking. Caution: many syrups are labeled "maple flavor" but contain just a little real maple syrup, or flavoring.

When cooking with maple syrup, use 3/4 cup for every cup of white sugar. Decrease the amount of liquid by 3 tablespoons.

Sorghum Syrup: A sweetener once popular in the Southern United States, sorghum syrup is made from sweet sorghum, a grain related to millet that grows on woody stalks to a height of 15 feet. The syrup is made by boiling the sorghum sap. The juice is boiled down to evaporate most of the water content, until it becomes syrup. Because sorghum cane is pest-resistant, is needs little pesticides, making it nearly organic, and very safe to consume. The syrup contains B vitamins and minerals like iron, calcium and phosphorus. It can be used in place of maple syrup.

Stevia Powder: Native to South America, stevia is a wonderful alternative for sweetening. Stevia is an herb that is a part of the sunflower family and is commonly known as sweetleaf, sweet leaf, sugarleaf, or simply stevia. It is widely grown for its sweet leaves. Its extracts have up to 300 times the sweetness of sugar and because it has a negligible effect on blood glucose and is known to enhance glucose tolerance, it is a much better choice than artificial sugars like Aspartame, Nutrasweet, Equal, Splenda, Sucralose, for people who are diabetic. Stevia in most forms, other than the white powered forms, gives a long even energy and works in the body like a complex carb. It is important to note that many of the extracts, are processed with alcohol and do not keep the plant properties intact; therefore it is important to pay close attention to how the stevia you may use is processed.

Here are my favorite choices and where you can find them...

• Rapadura- (also known as Organic Whole Cane Sugar-Unrefined & Unbleached) Don’t be fooled by other packages that say “Cane Sugar” or “Natural Cane Sugar”-look for the RAPUNZEL brand)- I bake with this and it actually enhances the flavor of baked goods. If your health food store does not carry it, ask them to order it for you and pretty soon, they may start carrying it now that someone is buying it. I used Sucanut all the time but now I am starting to LOVE Rapadura and now know that it is the best cane sugar you can buy! GOOD EARTH (a natural food store in my area) ordered it for me and will be keeping it on their shelves now! OR you can order it online...Amazon had some for $5/lb.

• RAW Honey- I asked a local Honey Farm near my house if they sold RAW honey and surprisingly they did and at the same price as the regular. Honey in the RAW has not been heated and therefore has natural enzymes that our bodies need to break this sugar down. This is how we were MEANT to eat our honey! Ask a local Honey Farm if they have RAW for sale…

• PURE Maple Syrup- I LOVE Pure Maple Syrup because it has a strong and robust flavor. It is quite expensive but I LOVE that Costco has it in a bigger container for about $16. It lasts a long time because you don’t need as much as the other fake maple syrups out there!


THE BAD: HIGHLY PROCESSED SWEETENERS

This section includes those sugars that are processed and/or have been chemically altered in a way that keeps our bodies from being able to easily break them down the way they were meant to be broken down. White sugar and foods with unnaturally high fructose content (like high fructose corn syrup and agave nectar) have been linked with a myriad of problems.

White Sugar: (Granulated Sugar, Powdered Sugar, Raw Sugar, Unbleached Sugar, Cane Sugar, and Beet Sugar, Florida Crystals, etc). White sugar is a crystalline substance comprised of 50% fructose and 50% glucose. Sugarcane and the sugar-beet are both sources of white sugar.

In cane sugar, the sugar is produced by extracting the sugarcane’s sweet juice, treating it with lime (calcium oxide, not the fruit!), boiling it, crystallizing it and then processing it further with phosphoric acid or calcium hydroxide. At that point, the sugar is filtered through activated carbon or bone char which helps to scrub the sugar “clean.” This process removes the molasses and its valuable trace minerals including manganese, copper, iron, selenium and others from the end-product, resulting in a product that is essentially devoid of nutrition.

In beet sugar, the sugar is produced by washing and slicing sugar beets, treating it with lime and carbon dioxide, filtering out impurities, crystallizing the sugar, centrifuging the mixture and then sorting the grains into different sizes. The majority of sugarbeet crops in the United States are now a product of genetic modification.

Brown Sugar: Brown sugar is manufactured using the same methods as white sugar, only the molasses is added back after manufacture at ratios of 3.5% for light brown sugar and 6.5% for dark brown sugar. As you see, it is no better than white sugar!

Coconut Palm Sugar: made from coconut sap, resembles cane sugar, but is very low on the glycemic index. Once collected, it is boiled and processed into a granule. Coconut palm sugars produce slow release energy, which sustains the human body through your daily activities without regular sugar “highs”, and “lows”.Coconut sugar contains sulfur, healthy micronutrients, potassium and magnesium. It is easiest to find in Asian countries, but is also available online. This sugar is fairly new on the market and not a lot is known about how good this sweetner is for our bodies. Once any liquid sugars are separated from the granules, it becomes a different product which in my opinion makes it harder on our bodies to break down in a natural and beneficial way. This is why I put Coconut Sugar in the Highly Processed Sweeteners section.

Turbinado Sugar: brown crystals, often called raw sugar, this is partially processed sugar that contains some molasses. Turbinado sugar is not bleached or refined to the extent that white table sugar is processed, and has fewer calories. You can find this kind of sugar in crystals that are a bit larger than white sugar.

High Fructose Corn Syrup: High fructose corn syrup is produced by processing corn to produce corn starch. Manufacturers then add a concoction of enzymes to the starch which transforms the glucose present in the corn starch into high fructose. This process can produce a variety of levels of fructose. Most often the corn syrups containing various levels are remixed to produce HFCS 55 which contains approximately 55% high fructose. The manufacture of high fructose corn syrup also makes heavy use of centrifuge and evaporation chambers similar to Agave nectar. The bulk of corn used in this manufacturing process is genetically modified. High fructose corn syrup was first synthesized in 1965 and since then has become the sweetener of choice among American processed food manufacturers.

Agave Nectar: Agave nectar, despite being heralded as a natural sweetener, is problematic. Agave nectar is manufactured by extracting the natural juice of the agave plant and subjecting that juice to an intense process! After extraction the juice is forced through a series of centrifuges that remove substances from the whole juice and further clarify the color of the liquid. At that point, the extraction is sent through a heated centrifuge which warms the liquid. Manufacturers then add enzymes to the juice which breaks down the agave’s natural sugars and transforms them into high fructose. Food producers began manufacturing agave nectar in the 1990s. It is a very new addition to the human diet. It's available as a fluid in light, medium, and amber. Extracted from the agave plant, this nectar is low on the glycemic index, and sweeter than refined sugar.

Maple Sugar:
made from the very last of the maple syrup, when all the liquids have boiled off. Maple sugar is crystalline and quite sticky. It can be used in baking and in hot drinks, and is often sold molded into candy.

Maltose: made from the starch of sprouted grains and rice. The plant starches are cooked and fermented until they convert into sugar. You may find this sold as crystals or as syrup.

Sucanat: I thought Sucanut and Rapadura were the same thing, but have researched more thoroughly and found out that Sucanat is manufactured in a way that the sugar stream and the molasses stream is separated from each other and then carefully re-blended to reach a consistent product. This process changes the chemistry and cannot be as good for our bodies. Unlike refined and processed white sugar, Sucanat retains its molasses content but the process in which it is made makes it not as healthy as Rapadura (listed under the Natural Sweetners section). Sucanat is generally accepted as a substitute for brown sugar, but is grainy and doesn't always fully dissolve. Sucanat (in common with all sugars) is not a significant source of any nutrient apart from simple carbohydrates. Sucanat may be confused with turbinado sugar; however, the two are fundamentally different. Turbinado sugar contains only a trace amount of its original molasses content, making it similar to refined sugar except with a golden color and a hint of molasses flavor. Sucanat, on the other hand, retains its full molasses content.

Fructose: made from fruit sugars, this is twice as sweet as refined sugar. Fructose is highly refined and causes deleterious effects, especially in children. I would stay completely away from this sugar and High Fructose Corn Syrup. If you do insist on using it, remember to half the amount that you would normally put in cookies, cakes, and drinks.

THE UGLY: ARTIFICIAL SWEETENERS
Modern, processed sugars and their modern, chemical-based substitutes are a result of deep and complicated manufacturing processes that render the food less nutrient-dense and even dangerous. Many of these chemically-based sweeteners lack the body and clean flavor of sugar while leaving a nasty and often bitter aftertaste and most of them have been linked to the development of various cancers.

Cyclamate: This is not currently on the market, having been banned in 1970 after studies implicated it along with saccharain as a cause of cancer.

Sucralose: This is600 times sweeter than sugar and is a slightly altered form of sugar. Sucralose is produced when the sucrose molecule is modified by the introduction of chlorine atoms. This adjustment to sugar’s molecular structure renders the sweetener calorie-free. Sucralose is a fairly new artificial sugar substitute and it has not been thoroughly studied. Concerns of its possible carcinogenic effects stemming from the use of chlorine to molecularly modify the food.

Saccharin: One of the oldest sugar substitutes–having first been manufactured in the late 19th century. Its sweetness was found by accident and it leaves a remarkably bitter aftertaste which is why it’s often blended with other chemical sweeteners. The FDA threatened to ban this substance after it was linked to the development of bladder cancer. It is still banned in several countries.

Aspertame: First synthesized in 1965 by a company that was later purchased by Monsanto. Like saccharin, aspertame was discovered by accident when a chemist was researching an anti-ulcer drug. Aspertame has been linked to cancer–particularly brain cancer and there continues to be a controversy surrounding its use.

Here is a list of basic types of sweeteners by their GI level...

Natural Sweetener Glycemic Index (GI) Rating
Carbs, based on their GI rank, are categorized to three groups:

o Low GI foods are foods with a GI less than 55. They cause a slower and lower rise in blood glucose levels.
Examples are Porridge, Apple and Sweet Potato.

o Intermediate GI foods are foods with a GI between 55 and 70. They cause blood glucose levels to go up at a moderate rate.
Examples are Pineapple, New Potato and Mango.

o High GI foods are foods with a GI greater than 70. They cause a rapid rise in blood glucose levels.
Examples are Jasmine rice, Cornflakes and Watermelon.

Look for sweeteners closer to the 55 and below GI range, BUT that are also minimally processed. Here are some visuals to get an idea, whether or not the numbers are exact (snice I've seen charts vary a little on exact Index rating).

Corn Syrup Substitute

In most cases, you should be able to replace corn syrup with sugar. The usual rule is as follows:

1 cup corn syrup can often be replaced by 1 1/4 granulated sugar (or light brown sugar) plus 1/4 of liquid (use water or whatever liquid is specified in the recipe you’re using). (there are homemade recipes out there that include cream of tartar and boiling to soft ball stage...but that breaks down the sugars and ends up not being a healthier alternative to store bought corn syrup.)

Other possibilities:
Lyle’s Golden Syrup (use in same quantity as corn syrup) -- Lyle’s Golden Syrup is widely available in the UK, but possibly harder to find in the United States. Decent sized supermarkets may stock it in the British section of the International aisles, I suspect.

Honey (use in same quantity as corn syrup) -- honey is quite a bit sweeter than corn syrup, but if the recipe doesn’t call for a lot of it, this may be an effective substitute.

Molasses (use in same quantity as corn syrup) -- molasses is darker, obviously, and also stronger in flavor. It’s also less sweet than corn syrup, so is probably your last resort.

If you’re baking something like cookies or bread, I’d suggest you try the honey substitute. Honey, like corn syrup, is hygroscopic. Hygroscopic substances attract water molecules from the air. What this means for baking is that cookies and bread baked with honey rather than sugar will tend to stay softer longer.
